Cold zone - tasty advantage over conventional fryers
In this case, the heating element is not located under the frying container, as in conventional fryers, but hangs freely in the oil at a distance of one to two centimeters.
The heated oil rises in the center, cools again as it flows down the outer walls and collects under the heating element. Depending on how long the fryer has been operating, the oil temperature in this area is lower than above the heating element, so that falling frying residues (e.g. breadcrumbs or small chips) cannot burn to the bottom of the container and reduce the flavor of the food and the life of the oil.
Construction
The cold zone of the fryer essentially consists of five individual parts:
1. stainless steel lid
2. stainless steel frying basket
3. stainless steel heating element
4. stainless steel oil container
5. stainless steel base
All five parts can be separated from each other and are therefore easy to clean.

Currently, almost all non-stick coatings contain the chemical group PFAS (polyfluorinated alkyl substances), which currently comprises over 4,200 different substances and is responsible for the so-called pearling effect.
These chemicals accumulate in the body and in nature and cannot be degraded or broken down.
Some of these substances are suspected of being toxic and therefore carcinogenic.
The EU is developing measures to gradually ban the use of PFAS in the manufacture of products that come into contact with food.
Around 200 substances will already be banned from 2023.
